All-Clad D3® Stainless Steel 10 and 12 inch Frying Pans Set
Are the All-Clad D3 10- and 12-inch frying pans the right stainless set for replacing worn-out nonstick skillets?
If you want stainless pans for proper browning, pan sauces and stovetop-to-oven cooking, this is a strong two-pan set to build around. Its D3 tri-ply construction pairs an aluminum core for even heating with a stainless cooking surface, and it works on induction as well as other stovetops. Stainless does take a little more technique than nonstick—especially for eggs—but you gain a surface that can handle high-heat searing without a coating to wear away. I’d choose it for frequent home cooking and add a nonstick pan only if effortless eggs are a priority.

Will food stick to stainless steel?
It can, if the pan is too cool, too hot, or the food is moved before it has browned. Preheat over moderate heat, add oil, then give meat or fish time to release before turning; those browned bits are also the start of a good pan sauce. Eggs are less forgiving, so use lower heat and enough fat—or keep a small nonstick skillet for breakfast. This set is best if you want to learn stainless technique, not if you expect food to slide around like it does on fresh nonstick.
Are two pans enough, and are these the useful sizes?
The 10-inch pan is handy for a couple of portions, while the 12-inch gives you room to brown more food without crowding. That space matters: crowded ingredients release moisture and steam instead of searing. The set skips a smaller pan, so a household that often cooks one egg or a single serving may want an additional skillet. For a couple or small family cooking most nights, these two sizes cover the main frying jobs well.
Does tri-ply make a difference on induction or gas?
The bonded aluminum core is the useful part of tri-ply: it spreads heat more evenly than a thin, basic stainless pan, while the stainless surface is suited to browning. This set works on induction and gas. On either one, use a burner close to the pan’s base size and bring the heat up gradually; blasting an empty pan is a poor shortcut and can contribute to warping. More layers are not automatically better for everyday cooking—good heat control matters more than chasing a ply count.
How much care does stainless need?
Hand-wash these pans, as recommended for the set, and soak stuck-on food rather than attacking it with a harsh abrasive. For stubborn stainless discoloration, a stainless-friendly cleanser such as Bar Keepers Friend can help; follow its directions and rinse well. Use moderate heat for most cooking and reserve high heat for tasks that need it. That routine keeps cleanup manageable and avoids treating the pan like disposable nonstick.

All-Clad D3: As good as they say?
Video by Uncle Scott's Kitchen · 70K subscribers · 10:01 long · 86K views · published June 2022
How they compare

Two workhorse tri-ply stainless pans for even heating, serious browning and oven cooking.

Three tri-ply stainless sizes, including a smaller 8-inch pan for one- or two-serving jobs.

Three easy-release nonstick pans for eggs and quick cleanup, with induction compatibility.
Who it suits
Buy this set if you cook regularly, want to replace peeling nonstick with stainless, and care most about searing, even heating and the flexibility to move pans into the oven or under the broiler. The 10- and 12-inch sizes suit couples and small families, and induction compatibility makes the set a sensible choice for an induction kitchen too.
What you give up
- You trade nonstick convenience for better browning and a durable stainless cooking surface: eggs and delicate fish need more attention, and cleanup takes more effort.
- The set contains two frying pans, not a small egg pan or a lidded sauté pan. Its handles are designed for a chef’s underhand grip, but stainless handles can get hot in use, particularly near a gas flame, so keep a potholder handy.
- The pans are oven- and broiler-safe up to 600°F, but that versatility does not make them a substitute for nonstick when you want effortless release.
When another one is the better buy
DELARLO Whole Body Tri-Ply Stainless Steel Frying Pan Set, 8”/10”/12” Cooking Pans: Choose the DELARLO set if you want three stainless pan sizes, including an 8-inch option, and prefer a broader size range over this two-pan set.
SENSARTE Nonstick Frying Pan Skillets, Swiss Granite Coating, 9.5+11+12.5 Inch: Choose the SENSARTE set if easy-release eggs and quick cleanup matter more than stainless searing, or if you want three coated pans in slightly different sizes. Its stated oven limit is lower, so it is not the pick for high-temperature oven cooking.

Questions buyers ask
Is five-ply worth it over tri-ply, and how does D3 compare with D5 on a gas stove?
More plies do not automatically mean better cooking; heat response and control matter more than the number alone. D3 already gives you an aluminum core for heat distribution, and it works on gas. For everyday frying, I would focus on using a well-sized burner and sensible heat rather than choosing cookware by ply count.
How do I stop a stainless pan from sticking or warping?
For sticking, use the preheating, oiling, and release steps above. To reduce warping risk, avoid aggressively heating an empty pan or plunging a very hot pan into cold water; gradual heating matters on induction as well as gas.
Do All-Clad stainless handles stay cool on a gas stove?
Do not count on a stainless handle staying cool, especially when a gas flame reaches around the sides of the pan. The handle has a chef-style underhand grip, but a potholder is still sensible when cooking or moving the pan.
Are stainless frying pans dishwasher safe?
Hand-wash this set. For stuck food, soak the pan first; for stubborn discoloration, use a cleanser intended for stainless steel and follow its directions.
Do these frying pans come with lids, and can I use a universal lid?
This set is the two frying pans, so plan on sourcing lids separately if you need them. A universal lid can work if it fits the pan’s rim securely; check the fit rather than assuming one lid will suit both pans.
What is the difference between a frying pan and a sauté pan?
A frying pan has sloped sides that make it easy to turn food and slide it onto a plate. A sauté pan usually has straighter, taller sides and is more convenient for covered cooking or larger amounts of liquid. These pans are for frying and searing, not a lidded sauté-pan setup.
Is tri-ply stainless worth choosing over a budget stainless pan?
Tri-ply is worth considering if you cook often and want more even heating for searing and sauces; a thin pan is more prone to uneven hot spots. The best value is the pan that fits your cooking habits and gets used, not simply the one with the most layers. I would compare the exact sets and their included sizes before choosing a budget alternative.
Is this a good wedding or housewarming gift?
It is a practical registry or housewarming gift for someone who wants to move from coated pans to stainless. Add a small nonstick skillet if effortless eggs are important to the recipient.
